Frankly on Cherokee, the brick and mortar expansion of the Frankly Sausages food truck concept, focuses on handmade sausages and hand-cut fries. The name Frankly, is a nod to the nickname for a hotdog, and also the meaning of frank: open, honest and direct. Which is the approach we take with our food and our open kitchen. You will see whole animal butchery on the steel table just a few feet behind the counter, where we hand stuff our sausages.

The menu, created by Chef/Owner Bill Cawthon, will feature classic style sausages that people will be familiar with from the truck, such as our Beer Brat, Chile Verde, and Italian. It will also have an exotics selection that will be rotating, including Alligator, Lamb and Wild Boar on the opening menu.

A hit on the truck for special events, we will be serving hot imported Swiss raclette cheese on our hand-cut fries on Friday and Saturday nights. The expanded menu will feature a shareable plate menu, with seasonal offerings such as chicken liver crostino and a butternut squash salad.

Pastry chef Michelle Hedman, (previously chef of Sarah’s on Central in Eureka), will create seasonal dessert options including for November, a Maple Pecan Cheesecake served in a mason jar.

Once our liquor license is finalized, our drink menu will feature 4 draft beers and a rotating selection of house made individual bottled cocktails. The new restaurant will be counter service with community style dining.
